Cuppies! | Friday, November 28, 2008 ; 1:38 PM♥
Kids love cupcakes. Dalia has been wanting to make some in a while and since we have leftover icing from yesterday's; we decide to make some cuppies today. She helped measure all the ingredients as usual.
The first few batches were gone within seconds. They love it and finished them by night time . Dalia kept 2 cupcakes for papa. :)

Let's make some cookies!
Makes: about 25 biscuits
Preparation time: 30 minutes plus 1 hour chilling time
Cooking time: 10-15 minutes
Oven temperature: 350'F / 150'C Mark 4
4 oz / 100 g butter
4 oz / 100g castor sugar
1 egg, beaten
8 oz / 225 g plain flour
2 level teaspoons baking powder
1/4 level teaspoon salt
1 teaspoon vanilla essence
Lightly grease some baking trays. Beat the butter and the sugar together in a mixing bowl with a wooden spoon. Gradually add the egg, beating well after each addition. Sift the flour, baking powder and salt into the bowl, add the vanilla essence and stir until well combined. Knead lightly in the bowl. Wrap in greaseproof paper and leave in the refrigerator for 1 hour. Roll out thinly on a lightly floured surface. Cut out the biscuits in shapes, e.g. circles, stars, hearts etc. Put them on the prepared baking trays and bake in a moderate oven (350'F / 180'C Mark 4) for 10-15 minutes. Remove the biscuits from the trays and cool on a wire rack.
